Back To School Breakfast

Back to school is always a hectic time for families, and no other mealtime is more challenging than breakfast. Getting the kids dressed, packing lunches, locating the singular lost shoe, reminding everyone about their homework and last but most importantly feeding your family a healthy whole grain breakfast can make the start of your day more seam hectic than it should be.

 

That’s why I love this make ahead recipe of steel cut oatmeal with grilled peaches and chicken sausages made in the Ronco Ready Grill. I take care of most of the work the night before, throw breakfast in the Ready Grill and instead of standing over the stove I can supervise my teenager’s wardrobe choice.

Steel cut oats are an excellent source of protein, soluble and insoluble fiber and some vitamins and minerals such as B vitamins and iron. Steel cut oats, just as any whole oats, make a healthy addition to your regular diet.

To prepare the oats the night before in your Ronco steamer basket mix together 1 1 ½ cup milk, ½ cup Greek vanilla yogurt, ¼ cup raisins, ¼ cup dried cranberries and 1 cup steel cut oats and leave the oat mixture overnight in the fridge. By soaking the oats overnight they soften enough to eat just out of the fridge and are delicious, or if you like them warm like my kids do add a ½ cup of hot water to the oats and stir. Pop some peaches and chicken sausages into the Ready Grill top it with the steal cut outs and cook for about 12 minutes to warm oats and cook sausages and peaches.  Breakfast is cooking and now I can locate that missing sneaker.

*An added bonus to preparing your steel cut oats in your steamer basket is that they won’t stick like they do in the pan and leave a huge mess for you to clean up.
